Whole Grain Banana Pancakes
Breakfast is my favorite meal of the day, in fact, I love it so much I will frequently have breakfast for dinner! These whole grain banana pancakes make the cut morning or night, because they are so easy and fast to whip up. Note: this recipe makes one serving, but is easily doubled or tripled if you’re having some friends or family over for brunch (or dinner).
Ingredients:
1/2 cup rolled oats
1/4 cup milk or non-dairy alternative
1 egg
1/2 ripe banana, mashed
1/2 tsp of pure vanilla extract
pinch of cinnamon
(Optional: 2 teaspoons of dark chocolate mini chips)
Directions:
1. Place pats in a blender and pulse into cornmeal like consistency
2. Add remaining ingredients and blend on low until smooth
3. Pour into small circles on a skillet sprayed with cooking spray over medium-heat. Cook on each side until golden brown and puffy, approx 4 minutes.
Serve while hot and sprinkle on your favorite topping: strawberries, blueberries, walnuts, whipped coconut milk, or a spoonful of Greek Yogurt.
