Superfood Granola Bar

The perfect grab-and-go snack bar.
Genuinely healthy snack bars can be harder to find than you think. Most of them have sneaky hidden sugars, are too high in sodium, too low in fiber, and are frequently unsatisfying calorie bombs. By making my own nutrient-dense, delicious, snack bars I know exactly what is in them. These Superfood Granola Bars are high in both inflammation-fighting omega-3s and satisfying protein thanks to their hemp hearts, while also being low in sugar and salt. They are a great on-the-go snacks or crumbled up as a toping to your yogurt and fresh fruit.

Serving Size: 1 bar
Ingredients:
- 1 cup Rolled rolled oats
- 1/2 cup Almonds, chopped (can also use walnuts, pecans, or a mixture of all three)
- 2/3 cup Dates, pitted
- 1 cup Manitoba Harvest Hemp Hearts
- 1/3 cup Dried blueberries
- 2 tablespoons Honey
- 1/4 cup cup creamy peanut butter (or almond butter)
Directions:
- Preheat oven to 350 degrees. Place nuts and oats on a baking dish and bake in oven for 13-15 minutes or until slightly golden brown.
- In a food processor, pulse dates until small bits (about 1 minute).
- In a large mixing bowl, place oats, nuts, dates, blueberries, and seeds. Set aside.
- In a saucepan over low heat, add honey and peanut butter, and stir together. Then, pour liquid over oat mixture and mix until well combined.
- Line a baking sheet or 8×8 pan with parchment paper. Transfer oat mixture to sheet/pan and flatten out till it is packed tight. Place in the freezer or fridge for 15-20 minutes until hardened. Slice into 10 even bars. Bars will last up to 7 days in an airtight container.
