Greek Yogurt Bark

I am always a fan of a bark because it is so simple to make and so satisfying to eat.  This Greek yogurt bark is a twist to the traditional chocolate bark, and adds a big dose of protein and probiotics while keeping that delicious crunch and taste!

Ingredients:

  • 2 cups plain Greek yogurt (I use Fage Total)
  • 1 tbsp of pure vanilla extract
  • 3 medium strawberries, chopped
  • 2 tbsp mini dark chocolate chips

**Feel free to play around with the toppings! Sometimes I like to add an extra crunch with shelled pistachio nuts or chopped almonds.  And you can always switch out the strawberries for blueberries or raspberries.

Directions:

  1. Line a small baking sheet or pan with parchment paper.
  2. Mix vanilla and yogurt together and spread over baking sheet to desired thickness, you do not need to spread yogurt to the edges of the pan.
  3. Sprinkle chips and strawberries (or topping you’re using) over yogurt.
  4. Place in freezer for 4 hours. Then break the bark up into pieces and refreeze.  Once the individual pieces are very firm, they are ready to eat or to save for dessert later!
