Grain-Free Cauliflower Breadsticks

I love these grain-free cauliflower breadsticks because they up the veggie content of any meal. They make an excellent addition to your holiday buffet, cheese platter, dinner party, or any meal where you want a little crunch!  I love to use hemp hearts for this recipe to really kick the protein up a notch, add some inflammation-fighting Omega-3’s, and for some extra delicious flavor.

Yields 10 servings
Serving size: 2 breadsticks

Ingredients:

  • 1 head Cauliflower, riced in a food processor (or bought pre-riced to save time/effort!)
  • 1/2 cup Manitoba Harvest Hemp Hearts
  • 2 Large eggs
  • 3/4 tsp. Sea salt
  • 1/2 tsp. Black pepper
  • 3 tbsp. Extra-virgin olive oil
  • 1 tbsp. Fresh parsley, chopped
  • 2 cloves Garlic, minced

Directions:

  1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.
  2. Place riced cauliflower in a microwave safe bowl and microwave on high for 10 minutes until softened. Set aside to cool.
  3. In a small bowl, combine olive oil, garlic, and parsley. Stir gently.
  4. When cauliflower is cool enough to touch, transfer to a dish towel (or paper towel can work too), and squeeze tightly to drain out as much water as possible.
  5. In a large bowl, combine the drained cauliflower with hemp seeds, eggs, sea salt, black pepper, and mix very well.
  6. Transfer the cauliflower mixture to the lined baking sheet and press into a rectangle, about 1/3 inch thick.  Gently brush the top with the olive oil mixture.
  7. Bake for about 25 minutes, until golden. Check on it after 15 minutes as to not over cook them. Let them cool slightly and then cut into long, thin breadstick-shaped rectangles.
