Sweet Potato Lentil Burgers

The Ultimate Plant-Based Burger
I recently made these delicious plant-based burgers with my friend Elia, of Feed Your Sister, and they are amazing! The lentils make them a great source of protein and fiber, while the sweet potato adds a seriously delicious twist to a typical veggie burger. Yields 6 burgers.
Ingredients:
- 1/3 cup cilantro, chopped
- 1/3 cup parsley, chopped
- 1/2 cup onion, chopped
- 3 small garlic cloves, chopped
- 1/4 cup flax seed meal
- 1 15-ounce can lentils, rinsed and drained well
- 3/4 cup sweet potato, mashed
- 1 egg
- 1/2 teaspoon pink himalayan salt
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon sumac
- 1 teaspoon fresh cracked black pepper
Directions:
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
- Add the first 4 ingredients into a large food processor. Pulse together until finely chopped. Use a spatula to scrape down the sides as needed.
- Add in flax meal, sweet potato, lentils, egg, and all spices. Pulse until well combined. Again, scrape down sides as needed.
- Use an ice cream scooper to form patties and place on baking sheet.
- Cook burgers for 25 minutes. Flip burgers carefully and flatten gently using you spatula, to form flat round burger patty-shape. Place back in oven and cook for another 25 minutes.
- Enjoy immediately with toppings of your choosing like avocado slices, slices beets, spinach or micro-greens, roasted peppers, anything you want! Or freeze patties for another day.
