Sweet Potato Lentil Burgers

The Ultimate Plant-Based Burger

I recently made these delicious plant-based burgers with my friend Elia, of Feed Your Sister, and they are amazing!  The lentils make them a great source of protein and fiber, while the sweet potato adds a seriously delicious twist to a typical veggie burger. Yields 6 burgers.

Ingredients:

  • 1/3 cup cilantro, chopped
  • 1/3 cup parsley, chopped
  • 1/2 cup onion, chopped
  • 3 small garlic cloves, chopped
  • 1/4 cup flax seed meal
  • 1 15-ounce can lentils, rinsed and drained well
  • 3/4 cup sweet potato, mashed
  • 1 egg
  • 1/2 teaspoon pink himalayan salt
  • 1 teaspoon turmeric 
  • 1 teaspoon paprika
  • 1 teaspoon sumac
  • 1 teaspoon fresh cracked black pepper

Directions:

  1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
  2. Add the first 4 ingredients into a large food processor. Pulse together until finely chopped. Use a spatula to scrape down the sides as needed.
  3. Add in flax meal, sweet potato, lentils, egg, and all spices. Pulse until well combined. Again, scrape down sides as needed.
  4. Use an ice cream scooper to form patties and place on baking sheet.
  5. Cook burgers for 25 minutes. Flip burgers carefully and flatten gently using you spatula, to form flat round  burger patty-shape. Place back in oven and cook for another 25 minutes.
  6. Enjoy immediately with toppings of your choosing like avocado slices, slices beets, spinach or micro-greens, roasted peppers, anything you want! Or freeze patties for another day.
