Greek Yogurt Bark

I am always a fan of a bark because it is so simple to make and so satisfying to eat. This Greek yogurt bark is a twist to the traditional chocolate bark, and adds a big dose of protein and probiotics while keeping that delicious crunch and taste!
Ingredients:
- 2 cups plain Greek yogurt (I use Fage Total)
- 1 tbsp of pure vanilla extract
- 3 medium strawberries, chopped
- 2 tbsp mini dark chocolate chips
**Feel free to play around with the toppings! Sometimes I like to add an extra crunch with shelled pistachio nuts or chopped almonds. And you can always switch out the strawberries for blueberries or raspberries.
Directions:
- Line a small baking sheet or pan with parchment paper.
- Mix vanilla and yogurt together and spread over baking sheet to desired thickness, you do not need to spread yogurt to the edges of the pan.
- Sprinkle chips and strawberries (or topping you’re using) over yogurt.
- Place in freezer for 4 hours. Then break the bark up into pieces and refreeze. Once the individual pieces are very firm, they are ready to eat or to save for dessert later!
